Description

Fluffy pancakes with crispy maple-glazed bacon and a hint of pure Canadian maple syrup

Ingredients

  • 1.5 teaspoons baking powder
  • 6 slices bacon
  • 1 cup milk
  • 1 teaspoon salt
  • 1 large egg
  • 2 tablespoons butter
  • 1 cup sugar
  • 0.5 cups flour
  • 0.25 cup maple syrup

Instructions

  1. Step 1: Preheat the oven to 400°F (200°C).
  2. Step 2: In a medium bowl, whisk together flour, baking powder, salt and sugar.
  3. Step 3: In a large bowl, whisk together milk, egg and melted butter.
  4. Step 4: Add dry ingredients to wet ingredients and stir until just combined. Do not overmix.
  5. Step 5: Cook the bacon slices in a skillet over medium heat until crispy. Flip halfway through.
  6. Step 6: Brush the cooked bacon with maple syrup and set aside.
  7. Step 7: Heat a non-stick skillet or griddle over medium heat.
  8. Step 8: Using a 1/4 cup measuring cup, scoop the batter onto the skillet or griddle.
  9. Step 9: Cook the pancakes for 2-3 minutes or until bubbles appear on the surface and the edges start to dry. Flip and cook for another 1-2 minutes.
  10. Step 10: Serve the pancakes hot with maple-glazed bacon on top.
