Description
Fluffy pancakes with crispy maple-glazed bacon and a hint of pure Canadian maple syrup
Ingredients
- 1.5 teaspoons baking powder
- 6 slices bacon
- 1 cup milk
- 1 teaspoon salt
- 1 large egg
- 2 tablespoons butter
- 1 cup sugar
- 0.5 cups flour
- 0.25 cup maple syrup
Instructions
- Step 1: Preheat the oven to 400°F (200°C).
- Step 2: In a medium bowl, whisk together flour, baking powder, salt and sugar.
- Step 3: In a large bowl, whisk together milk, egg and melted butter.
- Step 4: Add dry ingredients to wet ingredients and stir until just combined. Do not overmix.
- Step 5: Cook the bacon slices in a skillet over medium heat until crispy. Flip halfway through.
- Step 6: Brush the cooked bacon with maple syrup and set aside.
- Step 7: Heat a non-stick skillet or griddle over medium heat.
- Step 8: Using a 1/4 cup measuring cup, scoop the batter onto the skillet or griddle.
- Step 9: Cook the pancakes for 2-3 minutes or until bubbles appear on the surface and the edges start to dry. Flip and cook for another 1-2 minutes.
- Step 10: Serve the pancakes hot with maple-glazed bacon on top.
