A sweet and savory roasted butternut squash dish with a maple pecan crust
Ingredients
- 2 tbsp butter
- 0.5 cup maple syrup
- 0.5 tsp nutmeg
- 0.25 tsp salt
- 1 cup pecan halves
- 0.25 cup brown sugar
- 1 large butternut squash
- 1 tsp vanilla extract
- 1 tsp cinnamon
Instructions
- Step 1: Preheat oven to 400°F (200°C).
- Step 2: Peel, de-seed, and chop the butternut squash into 1-inch cubes.
- Step 3: In a large bowl, whisk together butter, maple syrup, brown sugar, cinnamon, nutmeg, and salt.
- Step 4: Add the squash cubes to the bowl and toss to coat with the maple mixture.
- Step 5: Spread the squash on a baking sheet and roast for 25 minutes.
- Step 6: In a small bowl, mix together pecan halves and vanilla extract.
- Step 7: After the squash has roasted for 25 minutes, sprinkle the pecan mixture evenly over the squash.
- Step 8: Return the squash to the oven and roast for an additional 10-15 minutes, or until the pecans are toasted and the squash is tender.
