Ingredients

  • 2 tbsp butter
  • 0.5 cup maple syrup
  • 0.5 tsp nutmeg
  • 0.25 tsp salt
  • 1 cup pecan halves
  • 0.25 cup brown sugar
  • 1 large butternut squash
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: Peel, de-seed, and chop the butternut squash into 1-inch cubes.
  3. Step 3: In a large bowl, whisk together butter, maple syrup, brown sugar, cinnamon, nutmeg, and salt.
  4. Step 4: Add the squash cubes to the bowl and toss to coat with the maple mixture.
  5. Step 5: Spread the squash on a baking sheet and roast for 25 minutes.
