Ingredients
- 8 ounces mozzarella cheese
- 1 cup San Marzano tomatoes
- 1 cup zucchini
- 1 cup cherry tomatoes
- 1 teaspoon salt
- 2 teaspoons active dry yeast
- 1 cup roasted red bell peppers
- 1.5 cups all-purpose flour
- 2 tablespoons olive oil
- 0.25 cup basil leaves
- 0.5 cups water
Instructions
- Step 1: In a large mixing bowl, combine warm water and yeast. Let it sit for 5-7 minutes until yeast is activated.
- Step 2: Add flour, salt, and olive oil to the bowl. Mix until a dough forms.
- Step 3: Knead the dough for 5-7 minutes until smooth and elastic.
- Step 4: Place the dough in a greased bowl, cover, and let it rise in a warm place for 1 hour.
- Step 5: Preheat oven to 450°F (230°C) with a pizza stone inside.
- Step 6: Punch down the dough and roll it out into a 12-inch circle.
- Step 7: Transfer the dough to the preheated stone.
- Step 8: Top the dough with crushed tomatoes, mozzarella cheese, roasted red bell peppers, zucchini, and cherry tomatoes.
- Step 9: Bake for 15-20 minutes until crust is golden brown.
- Step 10: Remove from oven and top with chopped fresh basil leaves.
