Description
A flavorful and healthy North African-inspired dish
Ingredients
- 1 cup mixed bell peppers
- 1 teaspoon smoked paprika
- 0.5 cup feta cheese
- 2 tablespoons parsley
- 1 cup couscous
- 1 cup Kalamata olives
- 2 cups water
- Salt and pepper
- 1 onion
- 2 cloves garlic
- 1 teaspoon cumin
- 2 tablespoons olive oil
- 1 cup cherry tomatoes
Instructions
- Step 1: In a large pot, bring the water to a boil.
- Step 2: Add the couscous, cover, and turn off the heat. Let it sit for 5 minutes.
- Step 3: In a large skillet, heat the olive oil over medium-high heat.
- Step 4: Add the diced onion and cook until translucent, about 3-4 minutes.
- Step 5: Add the minced garlic and cook for an additional minute.
- Step 6: Add the mixed bell peppers and cook until tender, about 4-5 minutes.
- Step 7: Add the cherry tomatoes and cook for an additional 2-3 minutes.
- Step 8: Fluff the cooked couscous with a fork and add it to the skillet.
- Step 9: Stir in the chopped parsley, ground cumin, smoked paprika, salt, and pepper.
- Step 10: Transfer the couscous mixture to a serving dish and top with Kalamata olives and crumbled feta cheese.
