A flavorful and healthy North African-inspired dish

Ingredients

  • 1 cup mixed bell peppers
  • 1 teaspoon smoked paprika
  • 0.5 cup feta cheese
  • 2 tablespoons parsley
  • 1 cup couscous
  • 1 cup Kalamata olives
  • 2 cups water
  • Salt and pepper
  • 1 onion
  • 2 cloves garlic
  • 1 teaspoon cumin
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes

Instructions

  1. Step 1: In a large pot, bring the water to a boil.
  2. Step 2: Add the couscous, cover, and turn off the heat. Let it sit for 5 minutes.
  3. Step 3: In a large skillet, heat the olive oil over medium-high heat.
  4. Step 4: Add the diced onion and cook until translucent, about 3-4 minutes.
  5. Step 5: Add the minced garlic and cook for an additional minute.
  6. Step 6: Add the mixed bell peppers and cook until tender, about 4-5 minutes.
  7. Step 7: Add the cherry tomatoes and cook for an additional 2-3 minutes.
  8. Step 8: Fluff the cooked couscous with a fork and add it to the skillet.
  9. Step 9: Stir in the chopped parsley, ground cumin, smoked paprika, salt, and pepper.
  10. Step 10: Transfer the couscous mixture to a serving dish and top with Kalamata olives and crumbled feta cheese.
