A refreshing pasta salad with Mediterranean flavors

Ingredients

  • 0.25 cup parsley
  • 1 cup Kalamata olives
  • 8 oz bow-tie pasta
  • 2 tbsp red wine vinegar
  • 2 tbsp olive oil
  • 2 cups cherry tomatoes
  • 0.5 cup feta cheese
  • 1 tsp dried oregano
  • 1 cup artichoke hearts
  • Salt and pepper
  • 1 cup cucumber

Instructions

  1. Step 1: Cook pasta according to package instructions, then set aside to cool.
  2. Step 2: In a large bowl, combine cooled pasta, cherry tomatoes, cucumber, olives, artichoke hearts, and feta cheese.
  3. Step 3: In a small bowl, whisk together olive oil, red wine vinegar, and dried oregano.
  4. Step 4: Pour dressing over pasta mixture and toss to combine.
  5. Step 5: Sprinkle parsley over the top and season with salt and pepper to taste.
