Description
A refreshing pasta salad with Mediterranean flavors
Ingredients
- 0.25 cup parsley
- 1 cup Kalamata olives
- 8 oz bow-tie pasta
- 2 tbsp red wine vinegar
- 2 tbsp olive oil
- 2 cups cherry tomatoes
- 0.5 cup feta cheese
- 1 tsp dried oregano
- 1 cup artichoke hearts
- Salt and pepper
- 1 cup cucumber
Instructions
- Step 1: Cook pasta according to package instructions, then set aside to cool.
- Step 2: In a large bowl, combine cooled pasta, cherry tomatoes, cucumber, olives, artichoke hearts, and feta cheese.
- Step 3: In a small bowl, whisk together olive oil, red wine vinegar, and dried oregano.
- Step 4: Pour dressing over pasta mixture and toss to combine.
- Step 5: Sprinkle parsley over the top and season with salt and pepper to taste.
