Description

A flavorful and healthy wrap filled with roasted Mediterranean vegetables and creamy hummus

Ingredients

  • 1 cup zucchini
  • 0.5 cup hummus
  • 1 cup bell peppers
  • 2 tbsp olive oil
  • 1 cup mixed greens
  • 0.25 cup feta cheese
  • 1 tsp lemon zest
  • 1 whole wheat tortilla
  • 0.5 cup Kalamata olives
  • Salt and pepper
  • 1 cup cucumber

Instructions

  1. Step 1: Preheat oven to 400°F (200°C)
  2. Step 2: Toss bell peppers and zucchini with 1 tbsp olive oil, salt, and pepper on a baking sheet. Roast for 20 minutes or until tender
  3. Step 3: Spread hummus on the tortilla, leaving a 1-inch border around the edges
  4. Step 4: Top hummus with mixed greens, sliced cucumber, roasted bell peppers and zucchini, sliced olives, and crumbled feta cheese
  5. Step 5: Drizzle with remaining 1 tbsp olive oil and sprinkle with lemon zest
  6. Step 6: Fold the bottom edge of the tortilla up over the filling, then fold in the sides and roll up the wrap tightly
