Description

A large flour tortilla wrapped around scrambled eggs, chorizo, cheddar cheese, black beans, and sautéed onions and bell peppers.

Ingredients

  • Salt and pepper
  • 2 teaspoons cumin
  • 1 can black beans
  • 1 cup cheddar cheese
  • 2 large bell peppers
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 1 large onion
  • salsa and sour cream
  • 1 teaspoon smoked paprika
  • 8 large eggs
  • 1 pound chorizo sausage
  • 8 large flour tortillas

Instructions

  1. Step 1: In a large skillet, heat the olive oil over medium-high heat.
  2. Step 2: Add the diced onion and cook until translucent, about 3-4 minutes.
  3. Step 3: Add the diced bell peppers and cook until tender, about 4-5 minutes.
  4. Step 4: Add the garlic and cook for 1 minute.
  5. Step 5: Add the chorizo sausage and cook, breaking it up with a spoon, until browned, about 5-6 minutes.
  6. Step 6: In a large bowl, whisk together the eggs, cumin, smoked paprika, salt, and pepper.
  7. Step 7: Pour the egg mixture over the cooked chorizo mixture and scramble until the eggs are cooked through.
  8. Step 8: Stir in the black beans and cook until heated through.
  9. Step 9: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  10. Step 10: Assemble the burritos by spooning the egg and chorizo mixture onto the center of a tortilla, topping with cheese, and folding the bottom half up over the filling, then folding in the sides and rolling the burrito up tightly.
  11. Step 11: Repeat with the remaining ingredients.
