Description
A large flour tortilla wrapped around scrambled eggs, chorizo, cheddar cheese, black beans, and sautéed onions and bell peppers.
Ingredients
- Salt and pepper
- 2 teaspoons cumin
- 1 can black beans
- 1 cup cheddar cheese
- 2 large bell peppers
- 2 cloves garlic
- 1 tablespoon olive oil
- 1 large onion
- salsa and sour cream
- 1 teaspoon smoked paprika
- 8 large eggs
- 1 pound chorizo sausage
- 8 large flour tortillas
Instructions
- Step 1: In a large skillet, heat the olive oil over medium-high heat.
- Step 2: Add the diced onion and cook until translucent, about 3-4 minutes.
- Step 3: Add the diced bell peppers and cook until tender, about 4-5 minutes.
- Step 4: Add the garlic and cook for 1 minute.
- Step 5: Add the chorizo sausage and cook, breaking it up with a spoon, until browned, about 5-6 minutes.
- Step 6: In a large bowl, whisk together the eggs, cumin, smoked paprika, salt, and pepper.
- Step 7: Pour the egg mixture over the cooked chorizo mixture and scramble until the eggs are cooked through.
- Step 8: Stir in the black beans and cook until heated through.
- Step 9: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Step 10: Assemble the burritos by spooning the egg and chorizo mixture onto the center of a tortilla, topping with cheese, and folding the bottom half up over the filling, then folding in the sides and rolling the burrito up tightly.
- Step 11: Repeat with the remaining ingredients.
