Tender and flavorful pulled pork with a Memphis-style dry rub

Ingredients

  • 2 tablespoons kosher salt
  • Coleslaw
  • 1 tablespoon black pepper
  • 0.25 cup Memphis-style dry rub
  • 1 cup barbecue sauce
  • 1 tablespoon garlic powder
  • 2 pounds pork shoulder
  • 1 tablespoon onion powder
  • 0.25 cup brown sugar
  • 2 tablespoons smoked paprika
  • 4 hamburger buns

Instructions

  1. Step 1: Preheat oven to 300°F (150°C)
  2. Step 2: In a small bowl, mix together dry rub, brown sugar, smoked paprika, kosher salt, black pepper, garlic powder, and onion powder
  3. Step 3: Rub the spice mixture all over the pork shoulder, making sure to coat it evenly
  4. Step 4: Place the pork shoulder in a large Dutch oven or oven-safe pot
  5. Step 5: Cover the pot with a lid and transfer it to the preheated oven
  6. Step 6: Bake for 6-8 hours or until the pork is tender and easily shreds with a fork
  7. Step 7: After 6 hours, remove the pot from the oven and carefully remove the pork from the pot
  8. Step 8: Using two forks, shred the pork into bite-sized pieces
  9. Step 9: Return the shredded pork to the pot and add the barbecue sauce
  10. Step 10: Toss the pork to coat it evenly with the sauce
  11. Step 11: Split the hamburger buns in half and spoon the pulled pork onto the buns
  12. Step 12: Top with coleslaw and serve immediately
