Description

Pan-seared black cod glazed with a sweet and savory miso sauce, served with steamed bok choy and pickled ginger

Ingredients

  • 2 tbsp brown sugar
  • 0.5 cup white miso paste
  • 2 tsp garlic
  • 0.25 cup vegetable oil
  • 2 tsp ginger
  • 4 oz black cod fillets
  • 2 tbsp rice vinegar
  • 4 cups bok choy
  • 0.25 cup pickled ginger
  • 0.25 cup mirin
  • 2 tbsp soy sauce
  • 0.25 cup sake

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: In a blender or food processor, combine miso paste, sake, mirin, brown sugar, soy sauce, rice vinegar, grated ginger, and garlic. Blend until smooth.
  3. Step 3: Place the black cod fillets on a baking sheet lined with parchment paper. Brush the miso glaze evenly over both sides of the fish.
  4. Step 4: Heat 2 tbsp of vegetable oil in an oven-safe skillet over medium-high heat. Sear the cod fillets for 2-3 minutes on each side, then transfer the skillet to the preheated oven.
  5. Step 5: Bake for 8-10 minutes or until the fish is cooked through.
  6. Step 6: While the fish is cooking, heat the remaining 2 tbsp of vegetable oil in a separate skillet over medium heat. Add the bok choy and cook until wilted, about 3-4 minutes.
  7. Step 7: Serve the black cod with steamed bok choy and pickled ginger on top.
