Ingredients

  • 0.25 cup lime juice
  • 0.25 teaspoon black pepper
  • 1 tablespoon oregano
  • 1 teaspoon ground cumin
  • 2 tablespoons yellow mustard
  • 1 large dill pickle
  • 4 slices ham
  • 4 cloves garlic
  • 1 pound pork shoulder
  • 0.5 teaspoon smoked paprika
  • 0.25 cup olive oil
  • 0.25 teaspoon salt
  • 4 slices Swiss cheese
  • 4 rolls Cuban bread

Instructions

  1. Step 1: Preheat oven to 300°F (150°C).
  2. Step 2: In a blender or food processor, combine lime juice, olive oil, garlic, oregano, cumin, smoked paprika, salt, and pepper. Blend until smooth.
  3. Step 3: Rub the mojo marinade all over the pork shoulder, making sure to coat it evenly.
  4. Step 4: Place the pork shoulder in a large Dutch oven or oven-safe pot and cover with a lid.
  5. Step 5: Roast the pork for 6 hours, or until tender and easily shredded with a fork.
  6. Step 6: Using two forks, shred the pork into bite-sized pieces.
  7. Step 7: Split the Cuban bread rolls in half and toast until crispy.
  8. Step 8: Assemble the sandwiches by spreading a layer of yellow mustard on the bottom half of each roll, followed by a few slices of ham, some shredded pork, a slice of Swiss cheese, and a few slices of dill pickle.
  9. Step 9: Top with the top half of the bread roll and press gently.
