Description
A classic Chinese dish made with pork, vegetables, and pancakes
Ingredients
- 1 tablespoon ginger
- 2 cloves garlic
- 1 cup mixed mushrooms
- 0.25 cup Chinese rice wine
- Salt and pepper
- 1 lb pork shoulder
- 2 tablespoons cornstarch
- 0.25 cup soy sauce
- 1 cup cabbage
- 2 tablespoons hoisin sauce
- 8 moo shu pancakes
- 1 cup scallions
- 2 tablespoons vegetable oil
Instructions
- Step 1: In a medium bowl, whisk together soy sauce, rice wine, and cornstarch. Add sliced pork and toss to coat. Let marinate for 10 minutes.
- Step 2: Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add pork and cook until browned, about 3-4 minutes. Remove from wok and set aside.
- Step 3: In the same wok, add the remaining 1 tablespoon of vegetable oil. Add garlic and ginger and stir-fry until fragrant, about 30 seconds.
- Step 4: Add mixed mushrooms, cabbage, and scallions to the wok. Stir-fry until vegetables are tender-crisp, about 2-3 minutes.
- Step 5: Return pork to the wok and stir in hoisin sauce. Cook for an additional 1-2 minutes.
- Step 6: To assemble the moo shu pork, lay a pancake on a flat surface and brush with a small amount of hoisin sauce. Add a few slices of pork and vegetables to the center of the pancake.
- Step 7: Fold the bottom half of the pancake up over the filling, then fold in the sides and roll the pancake into a tight cylinder. Repeat with remaining pancakes and filling.
