Description
A classic Italian dish with breaded and fried eggplant slices topped with marinara sauce and melted mozzarella cheese
Ingredients
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup Parmesan cheese
- 2 large eggplants
- 1 cup breadcrumbs
- 1 cup marinara sauce
- Olive oil
- 1 tsp black pepper
- 8 oz mozzarella cheese
- 1 tsp salt
Instructions
- Step 1: Preheat oven to 400°F (200°C)
- Step 2: Slice eggplants into 1/4-inch thick rounds
- Step 3: In a shallow dish, mix flour, salt, and pepper
- Step 4: In another dish, beat eggs
- Step 5: In a third dish, mix breadcrumbs and Parmesan cheese
- Step 6: Dip eggplant slices in flour, then eggs, then breadcrumbs
- Step 7: Fry eggplant slices in olive oil until golden brown
- Step 8: Transfer eggplant slices to a baking dish
- Step 9: Spoon marinara sauce over eggplant slices
- Step 10: Top with mozzarella cheese
- Step 11: Bake for 25-30 minutes or until cheese is melted and bubbly
