Mushroom Barley Beef Soup

Description
Hearty and comforting soup made with tender beef, flavorful mushrooms, and nutty barley
Ingredients
- 2 lbs beef stew meat
- 4 cups beef broth
- 1 cup pearl barley
- 2 stalks celery
- 2 medium onions
- 2 carrots
- 2 cups mushrooms
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper
- 1 bay leaf
- 3 cloves garlic
Instructions
- Step 1: In a large pot or Dutch oven, heat 2 tbsp of oil over medium-high heat. Add the beef and cook until browned on all sides, about 5 minutes. Remove the beef from the pot and set aside.
- Step 2: Add another 2 tbsp of oil to the pot and sauté the onions, garlic, carrots, and celery until the vegetables are tender, about 8 minutes.
- Step 3: Add the mushrooms to the pot and cook until they release their moisture and start to brown, about 5 minutes.
- Step 4: Add the beef broth, barley, thyme, rosemary, and bay leaf to the pot. Stir to combine and bring to a boil.
- Step 5: Return the beef to the pot and reduce the heat to low. Simmer, covered, for 1 1/2 hours, or until the beef is tender and the barley is cooked.
- Step 6: Season the soup with salt and pepper to taste. Serve hot.
