Description

Pan-seared chicken breast with sautéed mushrooms in a rich Marsala wine sauce

Ingredients

  • 2 cups mixed mushrooms
  • 4 chicken breasts
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 2 cloves garlic
  • Salt and pepper
  • 0.5 cup Marsala wine
  • 0.25 cup chicken broth
  • 1 teaspoon thyme

Instructions

  1. Step 1: Season the chicken with salt, pepper, and thyme.
  2. Step 2: Heat butter in a large skillet over medium-high heat. Sear the chicken for 2-3 minutes per side, or until browned. Transfer to a plate and set aside.
  3. Step 3: Add garlic to the skillet and sauté for 1 minute, until fragrant.
  4. Step 4: Add the mushrooms to the skillet and sauté until they release their moisture and start to brown, about 3-4 minutes.
  5. Step 5: Add Marsala wine to the skillet, scraping up any browned bits. Bring to a simmer and cook until the liquid is almost completely reduced, about 2-3 minutes.
  6. Step 6: Add chicken broth to the skillet and stir to combine. Bring to a simmer and cook for 1-2 minutes, until the sauce has thickened slightly.
  7. Step 7: Return the chicken to the skillet and spoon some of the sauce over the top. Simmer for an additional 2-3 minutes, until the chicken is cooked through.
  8. Step 8: Stir in flour to thicken the sauce, if desired. Serve hot.
