Description
Pan-seared chicken breast with sautéed mushrooms in a rich Marsala wine sauce
Ingredients
- 2 cups mixed mushrooms
- 4 chicken breasts
- 2 tablespoons butter
- 1 tablespoon all-purpose flour
- 2 cloves garlic
- Salt and pepper
- 0.5 cup Marsala wine
- 0.25 cup chicken broth
- 1 teaspoon thyme
Instructions
- Step 1: Season the chicken with salt, pepper, and thyme.
- Step 2: Heat butter in a large skillet over medium-high heat. Sear the chicken for 2-3 minutes per side, or until browned. Transfer to a plate and set aside.
- Step 3: Add garlic to the skillet and sauté for 1 minute, until fragrant.
- Step 4: Add the mushrooms to the skillet and sauté until they release their moisture and start to brown, about 3-4 minutes.
- Step 5: Add Marsala wine to the skillet, scraping up any browned bits. Bring to a simmer and cook until the liquid is almost completely reduced, about 2-3 minutes.
- Step 6: Add chicken broth to the skillet and stir to combine. Bring to a simmer and cook for 1-2 minutes, until the sauce has thickened slightly.
- Step 7: Return the chicken to the skillet and spoon some of the sauce over the top. Simmer for an additional 2-3 minutes, until the chicken is cooked through.
- Step 8: Stir in flour to thicken the sauce, if desired. Serve hot.
