Ingredients

  • 2 cups potatoes
  • 1 medium onion
  • 1 teaspoon thyme
  • 1 pound clams
  • 2 cloves garlic
  • 1 cup clam juice
  • 2 tablespoons butter
  • 0.25 teaspoon black pepper
  • 0.5 cup milk
  • 0.5 teaspoon salt

Instructions

  1. Step 1: Melt butter in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Step 2: Add garlic and cook for an additional 1 minute.
  3. Step 3: Add clams, clam juice, thyme, salt, and pepper. Cook, covered, until clams open, about 5-7 minutes.
  4. Step 4: Remove clams from pot and set aside. Strain broth through a fine-mesh sieve into a clean pot, discarding solids.
  5. Step 5: Add potatoes to pot and cook until tender, about 15-20 minutes.
  6. Step 6: Use an immersion blender to puree potatoes and broth until smooth.
  7. Step 7: Stir in milk and cook until heated through.
  8. Step 8: Return clams to pot and cook until warmed through.
