Description
A creamy and flavorful soup made with fresh clams, potatoes, and herbs
Ingredients
- 2 cups potatoes
- 1 medium onion
- 1 teaspoon thyme
- 1 pound clams
- 2 cloves garlic
- 1 cup clam juice
- 2 tablespoons butter
- 0.25 teaspoon black pepper
- 0.5 cup milk
- 0.5 teaspoon salt
Instructions
- Step 1: Melt butter in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Step 2: Add garlic and cook for an additional 1 minute.
- Step 3: Add clams, clam juice, thyme, salt, and pepper. Cook, covered, until clams open, about 5-7 minutes.
- Step 4: Remove clams from pot and set aside. Strain broth through a fine-mesh sieve into a clean pot, discarding solids.
- Step 5: Add potatoes to pot and cook until tender, about 15-20 minutes.
- Step 6: Use an immersion blender to puree potatoes and broth until smooth.
- Step 7: Stir in milk and cook until heated through.
- Step 8: Return clams to pot and cook until warmed through.
