Description
A Sicilian-inspired sandwich filling turned into a flavorful salad, served on a crusty muffuletta bread
Ingredients
- 1 cup black olives
- 0.5 tsp salt
- 1 tsp oregano
- 0.25 tsp black pepper
- 0.5 cup celery
- 4 oz provolone cheese
- 2 cloves garlic
- 1 cup green olives
- 2 tbsp red wine vinegar
- 0.5 cup red onion
- 4 1 lb muffuletta breads
- 0.25 cup parsley
Instructions
- Step 1: Preheat oven to 350°F (180°C).
- Step 2: Slice the muffuletta breads in half and place on a baking sheet.
- Step 3: Toast the bread in the oven for 5-7 minutes or until lightly browned.
- Step 4: In a large bowl, combine the sliced green and black olives, chopped red onion, chopped celery, chopped parsley, and minced garlic.
- Step 5: In a small bowl, whisk together the red wine vinegar, dried oregano, salt, and black pepper.
- Step 6: Pour the dressing over the olive mixture and toss to coat.
- Step 7: To assemble the salad, place a slice of toasted muffuletta bread on a plate, top with a slice of provolone cheese, and spoon the olive salad over the cheese.
- Step 8: Repeat the layers one more time, ending with the olive salad on top.
