Ingredients

  • 1 cup black olives
  • 0.5 tsp salt
  • 1 tsp oregano
  • 0.25 tsp black pepper
  • 0.5 cup celery
  • 4 oz provolone cheese
  • 2 cloves garlic
  • 1 cup green olives
  • 2 tbsp red wine vinegar
  • 0.5 cup red onion
  • 4 1 lb muffuletta breads
  • 0.25 cup parsley

Instructions

  1. Step 1: Preheat oven to 350°F (180°C).
  2. Step 2: Slice the muffuletta breads in half and place on a baking sheet.
  3. Step 3: Toast the bread in the oven for 5-7 minutes or until lightly browned.
  4. Step 4: In a large bowl, combine the sliced green and black olives, chopped red onion, chopped celery, chopped parsley, and minced garlic.
  5. Step 5: In a small bowl, whisk together the red wine vinegar, dried oregano, salt, and black pepper.
  6. Step 6: Pour the dressing over the olive mixture and toss to coat.
  7. Step 7: To assemble the salad, place a slice of toasted muffuletta bread on a plate, top with a slice of provolone cheese, and spoon the olive salad over the cheese.
  8. Step 8: Repeat the layers one more time, ending with the olive salad on top.
