Description

A classic dish of oysters topped with spinach, herbs, and a rich butter sauce

Ingredients

  • 12 large oysters
  • 0.25 cup Parmesan cheese
  • 0.25 cup all-purpose flour
  • 0.25 cup Pernod
  • 0.5 cup Romano cheese
  • 1 teaspoon paprika
  • 2 tablespoons unsalted butter
  • Salt and pepper
  • 0.25 cup spinach
  • 2 cloves garlic

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: In a saucepan, melt butter over medium heat. Add garlic and cook until fragrant, 1 minute.
  3. Step 3: Add spinach, Parmesan cheese, Pernod, paprika, salt, and pepper to the saucepan. Cook until spinach is wilted, 2-3 minutes.
  4. Step 4: Arrange oysters on a baking sheet lined with rock salt.
  5. Step 5: Spoon the spinach mixture over each oyster, dividing it evenly.
  6. Step 6: Sprinkle flour over the top of each oyster, then top with Romano cheese.
  7. Step 7: Bake until the cheese is golden brown and the oysters are cooked through, 12-15 minutes.
