Description
A classic dish of oysters topped with spinach, herbs, and a rich butter sauce
Ingredients
- 12 large oysters
- 0.25 cup Parmesan cheese
- 0.25 cup all-purpose flour
- 0.25 cup Pernod
- 0.5 cup Romano cheese
- 1 teaspoon paprika
- 2 tablespoons unsalted butter
- Salt and pepper
- 0.25 cup spinach
- 2 cloves garlic
Instructions
- Step 1: Preheat oven to 400°F (200°C).
- Step 2: In a saucepan, melt butter over medium heat. Add garlic and cook until fragrant, 1 minute.
- Step 3: Add spinach, Parmesan cheese, Pernod, paprika, salt, and pepper to the saucepan. Cook until spinach is wilted, 2-3 minutes.
- Step 4: Arrange oysters on a baking sheet lined with rock salt.
- Step 5: Spoon the spinach mixture over each oyster, dividing it evenly.
- Step 6: Sprinkle flour over the top of each oyster, then top with Romano cheese.
- Step 7: Bake until the cheese is golden brown and the oysters are cooked through, 12-15 minutes.
