Description
Traditional Spanish dish from the Valencia region, made with rice, vegetables, and seafood
Ingredients
- 1 pound chorizo
- 1 pound shrimp
- 2 cups chicken broth
- 1 onion
- 1 cup Calasparra rice
- 1 can (28 oz) crushed tomatoes
- 1 pound clams
- Salt and pepper
- 1 teaspoon saffron threads
- 1 red bell pepper
- 1 pound mussels
- 2 cloves garlic
- 1 teaspoon smoked paprika
- 2 tablespoons olive oil
- Lemon
Instructions
- Step 1: Heat oil in a large paella pan or skillet over medium-high heat.
- Step 2: Add onion and cook until translucent, about 3-4 minutes.
- Step 3: Add garlic and cook for 1 minute.
- Step 4: Add chorizo and cook until browned, about 3-4 minutes.
- Step 5: Add shrimp, mussels, and clams. Cook until seafood is lightly browned, about 2-3 minutes.
- Step 6: Add red bell pepper and cook until tender, about 2-3 minutes.
- Step 7: Add crushed tomatoes, chicken broth, smoked paprika, saffron, salt, and pepper. Stir to combine.
- Step 8: Add rice and stir to coat with the tomato mixture.
- Step 9: Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is tender and liquid has been absorbed.
- Step 10: Remove from heat and let rest for 5 minutes before serving with lemon wedges.
