Ingredients

  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons lemon juice
  • 0.5 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon honey
  • 1.5 teaspoons baking powder
  • 2 cups mixed berries
  • 1 large egg
  • 1 cup sugar

Instructions

  1. Step 1: In a medium bowl, whisk together flour, baking powder, salt, and sugar.
  2. Step 2: In a large bowl, whisk together milk, egg, and melted butter.
  3. Step 3: Add dry ingredients to wet ingredients and stir until just combined. Do not overmix.
  4. Step 4: Heat a non-stick skillet or griddle over medium heat.
  5. Step 5: Drop batter by 1/4 cupfuls onto skillet or griddle.
  6. Step 6: Cook for 2-3 minutes, until bubbles appear on surface and edges start to dry. Flip and cook for another 1-2 minutes.
