Description
Fluffy pancakes served with a sweet and tangy fruit compote made with mixed berries and a hint of lemon
Ingredients
- 1 cup milk
- 2 tablespoons butter
- 2 tablespoons lemon juice
- 0.5 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon honey
- 1.5 teaspoons baking powder
- 2 cups mixed berries
- 1 large egg
- 1 cup sugar
Instructions
- Step 1: In a medium bowl, whisk together flour, baking powder, salt, and sugar.
- Step 2: In a large bowl, whisk together milk, egg, and melted butter.
- Step 3: Add dry ingredients to wet ingredients and stir until just combined. Do not overmix.
- Step 4: Heat a non-stick skillet or griddle over medium heat.
- Step 5: Drop batter by 1/4 cupfuls onto skillet or griddle.
- Step 6: Cook for 2-3 minutes, until bubbles appear on surface and edges start to dry. Flip and cook for another 1-2 minutes.
- Step 7: In a blender or food processor, puree mixed berries, lemon juice, and honey until smooth.
- Step 8: Serve pancakes warm with fruit compote spooned over the top.
