Description
A classic Italian pasta dish made with olives, capers, garlic, and anchovies
Ingredients
- 0.25 cup black olives
- 0.25 cup (60ml) extra virgin olive oil
- Salt and freshly ground black pepper
- 0.25 cup pitted green olives
- 2 tbsp capers
- 3 cloves garlic
- 0.25 cup Parmesan cheese
- 2 tbsp parsley
- 12 oz spaghetti
- 6 fillets anchovy
Instructions
- Step 1: Bring a large pot of salted water to a boil and cook spaghetti according to package instructions until al dente
- Step 2: In a large skillet, heat the olive oil over medium heat
- Step 3: Add the garlic and cook, stirring occasionally, for 4-5 minutes or until fragrant
- Step 4: Add the sliced olives, capers, and anchovy fillets to the skillet and cook, stirring occasionally, for 2-3 minutes
- Step 5: Drain the cooked spaghetti and add it to the skillet, tossing to combine with the sauce
- Step 6: Season with salt and black pepper to taste
- Step 7: Transfer the pasta to a serving dish and top with parsley and Parmesan cheese
