Description

A classic Italian pasta dish made with olives, capers, garlic, and anchovies

Ingredients

  • 0.25 cup black olives
  • 0.25 cup (60ml) extra virgin olive oil
  • Salt and freshly ground black pepper
  • 0.25 cup pitted green olives
  • 2 tbsp capers
  • 3 cloves garlic
  • 0.25 cup Parmesan cheese
  • 2 tbsp parsley
  • 12 oz spaghetti
  • 6 fillets anchovy

Instructions

  1. Step 1: Bring a large pot of salted water to a boil and cook spaghetti according to package instructions until al dente
  2. Step 2: In a large skillet, heat the olive oil over medium heat
  3. Step 3: Add the garlic and cook, stirring occasionally, for 4-5 minutes or until fragrant
  4. Step 4: Add the sliced olives, capers, and anchovy fillets to the skillet and cook, stirring occasionally, for 2-3 minutes
  5. Step 5: Drain the cooked spaghetti and add it to the skillet, tossing to combine with the sauce
  6. Step 6: Season with salt and black pepper to taste
  7. Step 7: Transfer the pasta to a serving dish and top with parsley and Parmesan cheese
