Description
A colorful and flavorful pesto pasta dish featuring a mix of bowtie, penne, and linguine
Ingredients
- 0.5 cup Parmesan cheese
- 0.25 teaspoon black pepper
- 0.33 cup pine nuts
- 1 teaspoon salt
- 0.5 cups basil leaves
- 8 oz linguine pasta
- 1 cup cherry tomatoes
- 8 oz penne pasta
- 8 oz bowtie pasta
- 0.5 cup olive oil
- 2 cloves garlic
Instructions
- Step 1: Preheat the oven to 400°F (200°C).
- Step 2: Cook the bowtie, penne, and linguine pasta in a large pot of boiling salted water until al dente. Reserve 1 cup of pasta water before draining.
- Step 3: In a food processor, combine basil leaves, pine nuts, Parmesan cheese, and garlic. Process until well combined.
- Step 4: With the processor running, slowly pour in the olive oil through the top. Season with salt and pepper to taste.
- Step 5: In a large bowl, combine the cooked pasta, pesto sauce, and reserved pasta water. Toss until the pasta is well coated.
- Step 6: Transfer the pasta to a baking dish and top with cherry tomatoes.
- Step 7: Bake for 10-12 minutes or until the cherry tomatoes start to release their juices.
