Ingredients

  • 1 small onion
  • 2 eggs
  • 1 teaspoon oyster sauce
  • 1 cup pineapple
  • 1 teaspoon soy sauce
  • 2 cloves garlic
  • 1 tablespoon vegetable oil
  • 1 cup mixed vegetables
  • 2 cups rice
  • Salt and pepper

Instructions

  1. Step 1: Heat oil in a large skillet or wok over medium-high heat
  2. Step 2: Add onion and garlic and stir-fry until onion is translucent
  3. Step 3: Add mixed vegetables and stir-fry for 2 minutes
  4. Step 4: Push vegetables to one side of the pan
  5. Step 5: Add a little more oil if necessary, then pour in eggs and scramble until cooked through
  6. Step 6: Mix eggs with vegetables
  7. Step 7: Add cooked rice to the pan, breaking up any clumps with a spatula
  8. Step 8: Stir-fry rice with vegetables and eggs for 2-3 minutes
  9. Step 9: Add pineapple, soy sauce, and oyster sauce, and stir-fry for another minute
  10. Step 10: Season with salt and pepper to taste
