A sweet and savory Asian-inspired dish
Ingredients
- 1 small onion
- 2 eggs
- 1 teaspoon oyster sauce
- 1 cup pineapple
- 1 teaspoon soy sauce
- 2 cloves garlic
- 1 tablespoon vegetable oil
- 1 cup mixed vegetables
- 2 cups rice
- Salt and pepper
Instructions
- Step 1: Heat oil in a large skillet or wok over medium-high heat
- Step 2: Add onion and garlic and stir-fry until onion is translucent
- Step 3: Add mixed vegetables and stir-fry for 2 minutes
- Step 4: Push vegetables to one side of the pan
- Step 5: Add a little more oil if necessary, then pour in eggs and scramble until cooked through
- Step 6: Mix eggs with vegetables
- Step 7: Add cooked rice to the pan, breaking up any clumps with a spatula
- Step 8: Stir-fry rice with vegetables and eggs for 2-3 minutes
- Step 9: Add pineapple, soy sauce, and oyster sauce, and stir-fry for another minute
- Step 10: Season with salt and pepper to taste
