Description

Ingredients
- 1 teaspoon black pepper
- 1 pound prime rib roast
- 2 tablespoons olive oil
- 2 cloves garlic
- 2 tablespoons rosemary
- 1 teaspoon salt
- 2 tablespoons thyme
- 1 cup red wine
- 1 cup beef broth
Instructions
- Step 1: Preheat oven to 325°F (160°C)
- Step 2: In a small bowl, mix together olive oil, garlic, thyme, rosemary, salt, and pepper
- Step 3: Rub the mixture all over the prime rib roast
- Step 4: Place the roast in a large roasting pan and put it in the oven
- Step 5: Roast for 15 minutes per pound, or until the internal temperature reaches 130°F (54°C) for medium-rare
- Step 6: While the roast is cooking, combine beef broth and red wine in a saucepan and bring to a boil
- Step 7: Reduce heat to a simmer and cook until the au jus has reduced by half, stirring occasionally
- Step 8: Remove the roast from the oven and let it rest for 20 minutes before slicing
- Step 9: Serve with the au jus spooned over the top
