Quinoa and Black Bean Wrap

Description

A flavorful and nutritious wrap filled with quinoa, black beans, and roasted vegetables.

Ingredients

  • 4 whole wheat tortillas
  • Salt and pepper
  • 2 cloves garlic
  • 1 red bell pepper
  • 1 small red onion
  • 1 tsp cumin
  • Shredded cheese
  • Tomatoes
  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • lettuce

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: In a medium saucepan, bring quinoa and water to a boil. Reduce heat, cover, and simmer for 15-20 minutes or until quinoa is tender and fluffy.
  3. Step 3: While quinoa cooks, toss bell pepper and onion with 1 tbsp olive oil, cumin, smoked paprika, salt, and pepper on a baking sheet. Roast in the oven for 20-25 minutes or until tender.
  4. Step 4: In a large bowl, mash black beans using a fork or a potato masher.
  5. Step 5: Add cooked quinoa, roasted bell pepper and onion, garlic, and remaining 1 tbsp olive oil to the bowl with black beans. Stir to combine.
  6. Step 6: Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  7. Step 7: Assemble the wraps by spooning the quinoa and black bean mixture onto a tortilla, followed by shredded lettuce, diced tomatoes, and shredded cheese.
