Description
A flavorful and nutritious wrap filled with quinoa, black beans, and roasted vegetables.
Ingredients
- 4 whole wheat tortillas
- Salt and pepper
- 2 cloves garlic
- 1 red bell pepper
- 1 small red onion
- 1 tsp cumin
- Shredded cheese
- Tomatoes
- 1 cup quinoa
- 2 cups water
- 1 can black beans
- 1 tsp smoked paprika
- 2 tbsp olive oil

Instructions
- Step 1: Preheat oven to 400°F (200°C).
- Step 2: In a medium saucepan, bring quinoa and water to a boil. Reduce heat, cover, and simmer for 15-20 minutes or until quinoa is tender and fluffy.
- Step 3: While quinoa cooks, toss bell pepper and onion with 1 tbsp olive oil, cumin, smoked paprika, salt, and pepper on a baking sheet. Roast in the oven for 20-25 minutes or until tender.
- Step 4: In a large bowl, mash black beans using a fork or a potato masher.
- Step 5: Add cooked quinoa, roasted bell pepper and onion, garlic, and remaining 1 tbsp olive oil to the bowl with black beans. Stir to combine.
- Step 6: Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Step 7: Assemble the wraps by spooning the quinoa and black bean mixture onto a tortilla, followed by shredded lettuce, diced tomatoes, and shredded cheese.
