Quinoa Stuffed Bell Peppers

Description

Ingredients

  • Salt and pepper
  • 1 cup cheddar cheese
  • 2 cloves garlic
  • 1 cup black beans
  • 2 cups water
  • 1 teaspoon cumin
  • 1 cup quinoa
  • 1 tablespoon olive oil
  • 4 bell peppers
  • 1 onion
  • 1 teaspoon paprika

Instructions

  1. Step 1: Preheat oven to 375°F (190°C).
  2. Step 2: Cut off the tops of the bell peppers and remove seeds and membranes. Place them in a baking dish.
  3. Step 3: In a medium saucepan, bring quinoa and water to a boil. Reduce heat, cover, and simmer for 15-20 minutes or until quinoa is tender.
  4. Step 4: In a large skillet, heat olive oil over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  5. Step 5: Stir in cooked black beans, cumin, paprika, salt, and pepper. Cook for 1-2 minutes.
  6. Step 6: Fluff cooked quinoa with a fork and add to the skillet. Stir in shredded cheese.
  7. Step 7: Stuff each bell pepper with the quinoa mixture and cover with the tops.
  8. Step 8: Bake for 25-30 minutes or until bell peppers are tender.
