Description
A flavorful and nutritious dish filled with quinoa, black beans, and cheese, baked inside bell peppers.
Ingredients
- Salt and pepper
- 1 cup cheddar cheese
- 2 cloves garlic
- 1 cup black beans
- 2 cups water
- 1 teaspoon cumin
- 1 cup quinoa
- 1 tablespoon olive oil
- 4 bell peppers
- 1 onion
- 1 teaspoon paprika
Instructions
- Step 1: Preheat oven to 375°F (190°C).
- Step 2: Cut off the tops of the bell peppers and remove seeds and membranes. Place them in a baking dish.
- Step 3: In a medium saucepan, bring quinoa and water to a boil. Reduce heat, cover, and simmer for 15-20 minutes or until quinoa is tender.
- Step 4: In a large skillet, heat olive oil over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
- Step 5: Stir in cooked black beans, cumin, paprika, salt, and pepper. Cook for 1-2 minutes.
- Step 6: Fluff cooked quinoa with a fork and add to the skillet. Stir in shredded cheese.
- Step 7: Stuff each bell pepper with the quinoa mixture and cover with the tops.
- Step 8: Bake for 25-30 minutes or until bell peppers are tender.
