Description
A classic Louisiana-inspired dish made with red kidney beans, rice, and andouille sausage
Ingredients
- 4 cups chicken broth
- 1 tsp cayenne pepper
- 1 lb andouille sausage
- 1 tsp thyme
- 2 medium onions
- 1 tsp oregano
- 3 stalks celery
- 3 cloves garlic
- 1 lb dried red kidney beans
- Salt and pepper
- 1 cup white rice
Instructions
- Step 1: Heat oil in a large pot over medium-high heat. Add sausage and cook until browned, about 5 minutes.
- Step 2: Add onions, celery, and garlic to pot and cook until vegetables are tender, about 5 minutes.
- Step 3: Add soaked and drained red beans, chicken broth, thyme, oregano, cayenne pepper, salt, and pepper to pot. Bring to a boil, then reduce heat to low and simmer for 30 minutes.
- Step 4: Add rice to pot and stir to combine. Cook for an additional 20-25 minutes, or until rice is tender and liquid has been absorbed.
- Step 5: Serve hot, garnished with chopped scallions if desired.
