Description

A classic Louisiana-inspired dish made with red kidney beans, rice, and andouille sausage

Ingredients

  • 4 cups chicken broth
  • 1 tsp cayenne pepper
  • 1 lb andouille sausage
  • 1 tsp thyme
  • 2 medium onions
  • 1 tsp oregano
  • 3 stalks celery
  • 3 cloves garlic
  • 1 lb dried red kidney beans
  • Salt and pepper
  • 1 cup white rice

Instructions

  1. Step 1: Heat oil in a large pot over medium-high heat. Add sausage and cook until browned, about 5 minutes.
  2. Step 2: Add onions, celery, and garlic to pot and cook until vegetables are tender, about 5 minutes.
  3. Step 3: Add soaked and drained red beans, chicken broth, thyme, oregano, cayenne pepper, salt, and pepper to pot. Bring to a boil, then reduce heat to low and simmer for 30 minutes.
  4. Step 4: Add rice to pot and stir to combine. Cook for an additional 20-25 minutes, or until rice is tender and liquid has been absorbed.
  5. Step 5: Serve hot, garnished with chopped scallions if desired.
