Roasted Garlic Leg of Lamb

Description
Tender leg of lamb infused with the rich flavor of roasted garlic
Ingredients
- 2 tablespoons olive oil
- 2 tablespoons rosemary
- 1 teaspoon black pepper
- 8 cloves garlic
- 1 teaspoon salt
- 1 pound leg of lamb
- 1 lemon
Instructions
- Step 1: Preheat oven to 425°F (220°C)
- Step 2: Rinse lamb and pat dry with paper towels
- Step 3: Cut the top off of each garlic clove, drizzle with olive oil and wrap in foil
- Step 4: Roast garlic in the oven for 30-40 minutes, or until tender and mashed
- Step 5: In a small bowl, mix together roasted garlic, rosemary, salt, and pepper
- Step 6: Rub the garlic mixture all over the lamb, making sure to coat evenly
- Step 7: Place the lamb in a roasting pan and put in the oven
- Step 8: Roast for 20 minutes per pound, or until the lamb reaches desired level of doneness
- Step 9: Let the lamb rest for 10-15 minutes before slicing and serving with lemon wedges
