Roasted Garlic Leg of Lamb

Description

Tender leg of lamb infused with the rich flavor of roasted garlic

Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons rosemary
  • 1 teaspoon black pepper
  • 8 cloves garlic
  • 1 teaspoon salt
  • 1 pound leg of lamb
  • 1 lemon

Instructions

  1. Step 1: Preheat oven to 425°F (220°C)
  2. Step 2: Rinse lamb and pat dry with paper towels
  3. Step 3: Cut the top off of each garlic clove, drizzle with olive oil and wrap in foil
  4. Step 4: Roast garlic in the oven for 30-40 minutes, or until tender and mashed
  5. Step 5: In a small bowl, mix together roasted garlic, rosemary, salt, and pepper
  6. Step 6: Rub the garlic mixture all over the lamb, making sure to coat evenly
  7. Step 7: Place the lamb in a roasting pan and put in the oven
  8. Step 8: Roast for 20 minutes per pound, or until the lamb reaches desired level of doneness
  9. Step 9: Let the lamb rest for 10-15 minutes before slicing and serving with lemon wedges
