Roasted Red Pepper Hummus with Pita chips

Description
A classic Middle Eastern dip with a sweet and smoky twist, served with crispy pita chips
Ingredients
- 0.25 cup tahini
- 2 cloves garlic
- 2 red bell peppers
- 3 tablespoons olive oil
- 0.5 cups chickpeas
- 0.25 cup lemon juice
- 0.25 cup water
- 0.5 teaspoon salt
- 1 package pita bread
- 0.5 teaspoon paprika
Instructions
- Step 1: Preheat oven to 425°F (220°C). Place red peppers on a baking sheet and roast for 30-40 minutes, or until skin is blistered and charred.
- Step 2: Remove peppers from oven and let cool. Once cool enough to handle, peel off skin, remove seeds, and chop flesh into a rough puree.
- Step 3: In a blender or food processor, combine chickpeas, lemon juice, tahini, garlic, salt, and 1 tablespoon olive oil. Blend until smooth.
- Step 4: Add roasted red pepper puree, paprika, and water to the blender. Blend until well combined.
- Step 5: Transfer hummus to a serving bowl and drizzle with remaining 2 tablespoons olive oil.
- Step 6: Cut pita bread into triangles or strips and place on a baking sheet. Drizzle with olive oil and sprinkle with salt. Bake in oven at 400°F (200°C) for 10-12 minutes, or until crispy and golden.
- Step 7: Serve pita chips with roasted red pepper hummus.
