Description
A classic Southern breakfast dish featuring flaky biscuits smothered in a rich, meaty sausage gravy
Ingredients
- 1 pound sausage
- 0.25 teaspoon cayenne pepper
- 0.25 teaspoon black pepper
- 2 tablespoons butter
- 1 teaspoon salt
- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 0.75 cup buttermilk
Instructions
- Step 1: Preheat oven to 425°F (220°C).
- Step 2: In a large skillet, cook sausage over medium-high heat, breaking up with a spoon, until no longer pink, about 5-7 minutes.
- Step 3: Remove sausage from skillet with a slotted spoon and set aside on a plate.
- Step 4: Leave drippings in skillet and add flour, whisking to combine. Cook for 1 minute.
- Step 5: Gradually whisk in 1 cup of water and bring to a boil. Reduce heat to low and simmer for 2-3 minutes or until thickened.
- Step 6: Add cooked sausage back into gravy and stir to combine. Season with salt, black pepper, and cayenne pepper.
- Step 7: In a separate bowl, whisk together flour, baking powder, and salt.
- Step 8: Cut cold butter into dry ingredients with a pastry blender or your fingers until mixture resembles coarse crumbs.
- Step 9: Add buttermilk and stir until dough comes together in a shaggy mass.
- Step 10: Turn dough out onto a floured surface and knead a few times until it comes together.
- Step 11: Roll dough out to 1-inch thickness and use a biscuit cutter or the rim of a glass to cut out biscuits.
- Step 12: Gather scraps, re-roll dough, and cut out additional biscuits.
- Step 13: Place biscuits on a baking sheet lined with parchment paper and brush tops with melted butter.
- Step 14: Bake for 12-15 minutes or until golden brown.
- Step 15: Serve biscuits with sausage gravy spooned over the top.
