Description

A classic Southern breakfast dish featuring flaky biscuits smothered in a rich, meaty sausage gravy

Ingredients

  • 1 pound sausage
  • 0.25 teaspoon cayenne pepper
  • 0.25 teaspoon black pepper
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 0.75 cup buttermilk

Instructions

  1. Step 1: Preheat oven to 425°F (220°C).
  2. Step 2: In a large skillet, cook sausage over medium-high heat, breaking up with a spoon, until no longer pink, about 5-7 minutes.
  3. Step 3: Remove sausage from skillet with a slotted spoon and set aside on a plate.
  4. Step 4: Leave drippings in skillet and add flour, whisking to combine. Cook for 1 minute.
  5. Step 5: Gradually whisk in 1 cup of water and bring to a boil. Reduce heat to low and simmer for 2-3 minutes or until thickened.
  6. Step 6: Add cooked sausage back into gravy and stir to combine. Season with salt, black pepper, and cayenne pepper.
  7. Step 7: In a separate bowl, whisk together flour, baking powder, and salt.
  8. Step 8: Cut cold butter into dry ingredients with a pastry blender or your fingers until mixture resembles coarse crumbs.
  9. Step 9: Add buttermilk and stir until dough comes together in a shaggy mass.
  10. Step 10: Turn dough out onto a floured surface and knead a few times until it comes together.
  11. Step 11: Roll dough out to 1-inch thickness and use a biscuit cutter or the rim of a glass to cut out biscuits.
  12. Step 12: Gather scraps, re-roll dough, and cut out additional biscuits.
  13. Step 13: Place biscuits on a baking sheet lined with parchment paper and brush tops with melted butter.
  14. Step 14: Bake for 12-15 minutes or until golden brown.
  15. Step 15: Serve biscuits with sausage gravy spooned over the top.
