Ingredients
- 0.5 teaspoon paprika
- 1 pound mussels
- 0.25 teaspoon black pepper
- 1 large onion
- 3 cloves garlic
- 2 tablespoons vegetable oil
- 3 stalks celery
- 1 pound chicken thighs
- 1 pound shrimp
- 2 tablespoons Worcestershire sauce
- 2 cups fish stock
- 2 cups water
- 2 tablespoons hot sauce
- 2 tablespoons filé powder
- 1 teaspoon thyme
- 0.5 teaspoon salt
- 2 cups long-grain rice
- 1 pound andouille sausage
- 0.5 teaspoon cayenne pepper
- 2 leaves bay
- 1 teaspoon dried oregano
- 2 lemons
Instructions
- Step 1: Heat oil in a large cast-iron pot or Dutch oven over medium-high heat.
- Step 2: Add onion, celery, and garlic; cook until the vegetables are tender, about 5 minutes.
- Step 3: Add sausage and chicken; cook until the meat is browned, about 5 minutes.
- Step 4: Add thyme, oregano, cayenne pepper, paprika, salt, and black pepper; cook for 1 minute.
- Step 5: Add shrimp, mussels, rice, fish stock, water, filé powder, Worcestershire sauce, and hot sauce; stir to combine.
- Step 6: Bring the mixture to a boil, then reduce the heat to low and simmer, covered, until the seafood is cooked through and the rice is tender, about 20 minutes.
- Step 7: Remove the pot from the heat and let it cool slightly.
- Step 8: Stir in bay leaves and serve the gumbo hot, with lemon wedges on the side.
