Ingredients

  • 2 cups fish stock
  • 1 can crushed tomatoes
  • 1 pound clams
  • 1 cup Calasparra rice

  • 2 tablespoons olive oil
  • Lemon
  • 1 teaspoon saffron threads
  • 1 pound shrimp
  • 1 large onion
  • 1 pound mussels
  • 2 cloves garlic

Instructions

  1. Step 1: Heat the olive oil in a large paella pan or skillet over medium-high heat.
  2. Step 2: Add the diced onion and cook until translucent, about 3-4 minutes.
  3. Step 3: Add the minced garlic and cook for 1 minute.
  4. Step 4: Add the mussels, clams, shrimp, and chorizo. Cook for 2-3 minutes, until the seafood is lightly browned.
  5. Step 5: Add the smoked paprika, saffron with its soaking liquid, crushed tomatoes, and fish stock. Stir to combine.
  6. Step 6: Bring the mixture to a simmer, then add the Calasparra rice. Stir to combine.
  7. Step 7: Cook the paella over low heat, covered, for 20-25 minutes, or until the rice is cooked and the liquid has been absorbed.
  8. Step 8: Season the paella with salt and pepper to taste.
  9. Step 9: Garnish with chopped parsley and serve with lemon wedges.
