Ingredients
- parsley
- 1 teaspoon smoked paprika
- 2 cups fish stock
- 1 can crushed tomatoes
- 1 pound clams
- 1 cup Calasparra rice
- Salt and pepper
- 1 pound chorizo
- 2 tablespoons olive oil
- Lemon
- 1 teaspoon saffron threads
- 1 pound shrimp
- 1 large onion
- 1 pound mussels
- 2 cloves garlic
Instructions
- Step 1: Heat the olive oil in a large paella pan or skillet over medium-high heat.
- Step 2: Add the diced onion and cook until translucent, about 3-4 minutes.
- Step 3: Add the minced garlic and cook for 1 minute.
- Step 4: Add the mussels, clams, shrimp, and chorizo. Cook for 2-3 minutes, until the seafood is lightly browned.
- Step 5: Add the smoked paprika, saffron with its soaking liquid, crushed tomatoes, and fish stock. Stir to combine.
- Step 6: Bring the mixture to a simmer, then add the Calasparra rice. Stir to combine.
- Step 7: Cook the paella over low heat, covered, for 20-25 minutes, or until the rice is cooked and the liquid has been absorbed.
- Step 8: Season the paella with salt and pepper to taste.
- Step 9: Garnish with chopped parsley and serve with lemon wedges.
