Ingredients
- 0.25 cup cilantro
- 1 cup onion
- 0.5 teaspoon paprika
- 1 tablespoon olive oil
- 6 large flour tortillas
- 2 cups cheddar cheese
- 1 cup bell pepper
- 0.5 cups black beans
- 1 teaspoon cumin
- 1 cup pinto beans
- Salt and pepper
- 2 cloves garlic
- 1 cup Monterey Jack cheese
- 1 teaspoon chili powder
Instructions
- Step 1: Preheat oven to 375°F (190°C).
- Step 2: In a large skillet, heat olive oil over medium heat. Add onion and cook until softened, about 5 minutes.
- Step 3: Add garlic, cumin, chili powder, and paprika. Cook for 1 minute, stirring constantly.
- Step 4: Stir in black beans, pinto beans, and bell pepper. Cook for 2-3 minutes, until heated through.
- Step 5: In a large bowl, combine cheddar and Monterey Jack cheese.
- Step 6: To assemble the burritos, lay a tortilla flat and spread a quarter of the bean mixture down the center of the tortilla.
- Step 7: Top with a quarter of the cheese mixture, followed by a sprinkle of cilantro.
- Step 8: Repeat the layers two more times, ending with a layer of cheese on top.
- Step 9: Roll the burrito tightly and place seam-side down on a baking sheet. Repeat with remaining ingredients.
- Step 10: Bake for 20-25 minutes, until cheese is melted and bubbly.
