Ingredients

  • 0.25 cup cilantro
  • 1 cup onion
  • 0.5 teaspoon paprika
  • 1 tablespoon olive oil
  • 6 large flour tortillas
  • 2 cups cheddar cheese
  • 1 cup bell pepper
  • 0.5 cups black beans
  • 1 teaspoon cumin
  • 1 cup pinto beans
  • Salt and pepper
  • 2 cloves garlic
  • 1 cup Monterey Jack cheese
  • 1 teaspoon chili powder

Instructions

  1. Step 1: Preheat oven to 375°F (190°C).
  2. Step 2: In a large skillet, heat olive oil over medium heat. Add onion and cook until softened, about 5 minutes.
  3. Step 3: Add garlic, cumin, chili powder, and paprika. Cook for 1 minute, stirring constantly.
  4. Step 4: Stir in black beans, pinto beans, and bell pepper. Cook for 2-3 minutes, until heated through.
  5. Step 5: In a large bowl, combine cheddar and Monterey Jack cheese.
  6. Step 6: To assemble the burritos, lay a tortilla flat and spread a quarter of the bean mixture down the center of the tortilla.
  7. Step 7: Top with a quarter of the cheese mixture, followed by a sprinkle of cilantro.
  8. Step 8: Repeat the layers two more times, ending with a layer of cheese on top.
  9. Step 9: Roll the burrito tightly and place seam-side down on a baking sheet. Repeat with remaining ingredients.
  10. Step 10: Bake for 20-25 minutes, until cheese is melted and bubbly.
