Description
A North African dish of eggs poached in a spicy tomato sauce
Ingredients
- 2 large bell peppers
- parsley
- 1 tsp cumin
- 4 large eggs
- 1 can (28 oz) crushed tomatoes
- 1 tsp smoked paprika
- 0.5 tsp cayenne pepper
- 3 cloves garlic
- Salt and pepper
- 2 large onions
- 2 tbsp olive oil
Instructions
- Step 1: Heat the oil in a large cast-iron skillet over medium heat
- Step 2: Add the onions and bell peppers, cook until softened (8-10 minutes)
- Step 3: Add the garlic, smoked paprika, cumin, and cayenne pepper, cook for 1 minute
- Step 4: Add the crushed tomatoes, salt, and pepper, stir to combine
- Step 5: Bring the sauce to a simmer and cook for 10-15 minutes, stirring occasionally
- Step 6: Create 4 wells in the sauce and crack an egg into each well
- Step 7: Transfer the skillet to the oven and bake at 400°F (200°C) for 15-20 minutes, or until the eggs are cooked to your liking
- Step 8: Garnish with chopped parsley and serve hot
