Description

A North African dish of eggs poached in a spicy tomato sauce

Ingredients

  • 2 large bell peppers
  • parsley
  • 1 tsp cumin
  • 4 large eggs
  • 1 can (28 oz) crushed tomatoes
  • 1 tsp smoked paprika
  • 0.5 tsp cayenne pepper
  • 3 cloves garlic
  • Salt and pepper
  • 2 large onions
  • 2 tbsp olive oil

Instructions

  1. Step 1: Heat the oil in a large cast-iron skillet over medium heat
  2. Step 2: Add the onions and bell peppers, cook until softened (8-10 minutes)
  3. Step 3: Add the garlic, smoked paprika, cumin, and cayenne pepper, cook for 1 minute
  4. Step 4: Add the crushed tomatoes, salt, and pepper, stir to combine
  5. Step 5: Bring the sauce to a simmer and cook for 10-15 minutes, stirring occasionally
  6. Step 6: Create 4 wells in the sauce and crack an egg into each well
  7. Step 7: Transfer the skillet to the oven and bake at 400°F (200°C) for 15-20 minutes, or until the eggs are cooked to your liking
  8. Step 8: Garnish with chopped parsley and serve hot
