Description

North African-inspired eggs poached in a spicy green tomatillo sauce

Ingredients

  • 4 large eggs
  • 2 cups chicken broth
  • Salt and pepper
  • 0.5 teaspoon salt
  • 1 teaspoon cumin
  • 3 large tomatillos
  • 2 cups cilantro
  • 0.5 cup feta cheese
  • 0.25 teaspoon black pepper
  • 3 cloves garlic
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • 2 peppers jalapeño
  • 2 large onions

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: Heat oil in a large cast-iron skillet over medium heat.
  3. Step 3: Add onions and cook, stirring occasionally, until softened and lightly charred, 8-10 minutes.
  4. Step 4: Add tomatillos, jalapeños, garlic, cumin, smoked paprika, salt, and pepper. Cook, stirring occasionally, until the vegetables are tender, 10-12 minutes.
  5. Step 5: Stir in chopped cilantro and chicken broth. Bring to a simmer.
  6. Step 6: Using the back of a spoon, create 4 wells in the sauce. Crack an egg into each well.
  7. Step 7: Transfer skillet to the preheated oven and bake until the whites are set and the yolks are still runny, 12-15 minutes.
  8. Step 8: Remove from oven and season with salt and pepper to taste.
