Description
North African-inspired eggs poached in a spicy green tomatillo sauce
Ingredients
- 4 large eggs
- 2 cups chicken broth
- Salt and pepper
- 0.5 teaspoon salt
- 1 teaspoon cumin
- 3 large tomatillos
- 2 cups cilantro
- 0.5 cup feta cheese
- 0.25 teaspoon black pepper
- 3 cloves garlic
- 1 teaspoon smoked paprika
- 2 tablespoons olive oil
- 2 peppers jalapeño
- 2 large onions
Instructions
- Step 1: Preheat oven to 400°F (200°C).
- Step 2: Heat oil in a large cast-iron skillet over medium heat.
- Step 3: Add onions and cook, stirring occasionally, until softened and lightly charred, 8-10 minutes.
- Step 4: Add tomatillos, jalapeños, garlic, cumin, smoked paprika, salt, and pepper. Cook, stirring occasionally, until the vegetables are tender, 10-12 minutes.
- Step 5: Stir in chopped cilantro and chicken broth. Bring to a simmer.
- Step 6: Using the back of a spoon, create 4 wells in the sauce. Crack an egg into each well.
- Step 7: Transfer skillet to the preheated oven and bake until the whites are set and the yolks are still runny, 12-15 minutes.
- Step 8: Remove from oven and season with salt and pepper to taste.
