Shakshuka with Feta Cheese

Description
A North African-inspired dish of eggs poached in a flavorful tomato sauce, topped with crumbled feta cheese
Ingredients
- 2 tbsp olive oil
- 1 tsp cumin
- 2 cans crushed tomatoes
- 1 cup feta cheese
- 4 large eggs
- 1 tsp smoked paprika
- parsley
- 0.25 tsp black pepper
- 3 large bell peppers
- 2 large onions
- 0.5 tsp salt
- 5 cloves garlic
Instructions
- Step 1: Heat olive oil in a large cast-iron skillet over medium heat
- Step 2: Add chopped onions and cook until translucent, about 5 minutes
- Step 3: Add chopped bell peppers and cook until tender, about 5 minutes
- Step 4: Add minced garlic and cook for 1 minute
- Step 5: Stir in smoked paprika, cumin, salt, and pepper
- Step 6: Add crushed tomatoes and stir to combine
- Step 7: Bring sauce to a simmer and cook for 10 minutes
- Step 8: Create 4 wells in the sauce and crack an egg into each well
- Step 9: Transfer skillet to oven and bake at 400°F (200°C) for 15-20 minutes, or until eggs are cooked to desired doneness
- Step 10: Remove from oven and top with crumbled feta cheese
- Step 11: Garnish with chopped parsley and serve hot
