Shakshuka with Feta Cheese

Description

A North African-inspired dish of eggs poached in a flavorful tomato sauce, topped with crumbled feta cheese

Ingredients

  • 2 tbsp olive oil
  • 1 tsp cumin
  • 2 cans crushed tomatoes
  • 1 cup feta cheese
  • 4 large eggs
  • 1 tsp smoked paprika
  • parsley
  • 0.25 tsp black pepper
  • 3 large bell peppers
  • 2 large onions
  • 0.5 tsp salt
  • 5 cloves garlic

Instructions

  1. Step 1: Heat olive oil in a large cast-iron skillet over medium heat
  2. Step 2: Add chopped onions and cook until translucent, about 5 minutes
  3. Step 3: Add chopped bell peppers and cook until tender, about 5 minutes
  4. Step 4: Add minced garlic and cook for 1 minute
  5. Step 5: Stir in smoked paprika, cumin, salt, and pepper
  6. Step 6: Add crushed tomatoes and stir to combine
  7. Step 7: Bring sauce to a simmer and cook for 10 minutes
  8. Step 8: Create 4 wells in the sauce and crack an egg into each well
  9. Step 9: Transfer skillet to oven and bake at 400°F (200°C) for 15-20 minutes, or until eggs are cooked to desired doneness
  10. Step 10: Remove from oven and top with crumbled feta cheese
  11. Step 11: Garnish with chopped parsley and serve hot
