Description
Stir-fried rice noodles with succulent shrimp, crunchy peanuts, and a tangy tamarind sauce
Ingredients
- 2 tablespoons vegetable oil
- 1 pound shrimp
- 2 cloves garlic
- 0.25 teaspoon red pepper flakes
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 1 onion
- 0.25 cup cilantro
- 2 tablespoons tamarind paste
- 2 tablespoons palm sugar
- 1 teaspoon ginger
- 0.25 cup peanuts
- Salt
- 2 tablespoons lime juice
- 0.5 cup rice noodles
Instructions
- Step 1: Cook the rice noodles according to package instructions and set aside.
- Step 2: Heat the oil in a large wok or frying pan over medium-high heat.
- Step 3: Add the onion and cook, stirring occasionally, until lightly browned, about 5 minutes.
- Step 4: Add the garlic and cook for 1 minute, until fragrant.
- Step 5: Add the shrimp and cook, stirring constantly, until pink and just cooked through, about 2-3 minutes.
- Step 6: In a small bowl, whisk together the tamarind paste, palm sugar, fish sauce, and soy sauce.
- Step 7: Pour the sauce into the wok and stir to coat the shrimp and onion.
- Step 8: Add the cooked noodles, cilantro, peanuts, lime juice, ginger, and red pepper flakes to the wok.
- Step 9: Stir-fry everything together for about 2 minutes, until the noodles are well coated with the sauce.
- Step 10: Season with salt to taste.
- Step 11: Transfer the Pad Thai to a serving platter and serve immediately.
