Sichuan Spicy Fried Rice

Description

A spicy and numbing Sichuan-style fried rice dish

Ingredients

  • 1 teaspoon Shaoxing wine
  • 1 cup scallions
  • 2 cloves garlic
  • 2 teaspoons soy sauce
  • 2 cups rice
  • 1 cup chicken
  • 2 eggs
  • 1 teaspoon sesame oil
  • 1 tablespoon Sichuan peppercorns
  • Salt
  • 0.25 teaspoon red pepper flakes
  • 1 small onion

Instructions

  1. Step 1: Heat 1 tablespoon of sesame oil in a wok or large skillet over medium-high heat.
  2. Step 2: Add Sichuan peppercorns and cook, stirring constantly, until fragrant, about 30 seconds.
  3. Step 3: Add garlic and onion and cook, stirring constantly, until the onion is translucent, about 2 minutes.
  4. Step 4: Add chicken and cook, stirring constantly, until heated through, about 2 minutes.
  5. Step 5: Push the chicken mixture to one side of the wok.
  6. Step 6: Add a little more sesame oil if necessary, then pour in the beaten eggs.
  7. Step 7: Scramble the eggs until they are cooked through, breaking them up into small pieces as they cook.
  8. Step 8: Mix the eggs with the chicken mixture.
  9. Step 9: Add cooked rice to the wok, breaking up any clumps with a spatula.
  10. Step 10: Stir-fry the rice with the chicken and egg mixture for about 5 minutes, until everything is well combined and heated through.
  11. Step 11: Add soy sauce, Shaoxing wine, and red pepper flakes, and stir-fry for another minute.
  12. Step 12: Taste and adjust the seasoning as needed.
  13. Step 13: Transfer the fried rice to a serving platter, garnished with diced scallions.
