Ingredients
- 0.5 teaspoon salt
- 1 tablespoon white vinegar
- 0.25 teaspoon red pepper flakes
- 0.25 teaspoon black pepper
- 2 avocados
- 2 large eggs
- 2 tablespoons lemon juice
- 0.25 cup water
- 4 slices whole wheat bread
Instructions
- Step 1: Preheat the oven to 400°F (200°C).
- Step 2: Slice the bread into 1-inch thick slices and toast in the oven for 5-7 minutes or until lightly browned.
- Step 3: Cut the avocados in half, remove the pit, and mash in a bowl with a fork until mostly smooth.
- Step 4: Add the salt, black pepper, red pepper flakes, and lemon juice to the bowl with the mashed avocado and mix well.
- Step 5: Spread the mashed avocado mixture onto the toasted bread slices.
- Step 6: Fill a medium-sized saucepan with water and add the white vinegar. Bring to a boil, then reduce the heat to a simmer.
- Step 7: Crack the eggs into the water and poach for 3-5 minutes or until the whites are set and the yolks are cooked to your desired doneness.
- Step 8: Remove the eggs from the water with a slotted spoon and place on top of the avocado toast.
