Ingredients
- 0.25 cup active sourdough starter
- Salt and pepper
- 2 cloves garlic
- 3 cups bread flour
- 1 tsp thyme

- 2 cups littleneck clams
- 0.5 cup heavy cream
- 0.5 tsp oregano
- 2 tbsp unsalted butter
- 0.5 cup onion
- 2 cups fish stock
- 0.5 cup celery
- 1 cup water
Instructions
- Step 1: In a large mixing bowl, combine warm water and sourdough starter. Mix until starter is fully dissolved.
- Step 2: Add bread flour, salt, and melted butter to the bowl. Mix until a shaggy dough forms.
- Step 3: Knead the dough for 10 minutes, until it becomes smooth and elastic.
- Step 4: Place the dough in a lightly oiled bowl, cover it with plastic wrap, and let it rise in a warm place for 4-5 hours, or until it has doubled in size.
- Step 5: Preheat oven to 450°F (230°C).
- Step 6: Punch down the dough and shape it into a round or oblong shape. Place the dough onto a baking sheet lined with parchment paper.
- Step 7: Bake the bread for 25-30 minutes, or until it is golden brown and sounds hollow when tapped on the bottom.
- Step 8: While the bread is baking, melt 1 tablespoon of butter in a large saucepan over medium heat.
