Crispy fried catfish with a spicy kick

Ingredients

  • 0.25 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp paprika
  • 0.5 cup panko breadcrumbs
  • Vegetable oil
  • 1 cup buttermilk
  • 4 6 oz catfish fillets
  • 1 tsp onion powder
  • 1 cup all-purpose cornmeal
  • 1 cup flour
  • 0.5 tsp black pepper

Instructions

  1. Step 1: In a shallow dish, mix together flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
  2. Step 2: Pour buttermilk into a separate shallow dish.
  3. Step 3: Dip each catfish fillet into the buttermilk, then coat in the flour mixture.
  4. Step 4: Dip the floured catfish into the cornmeal, pressing gently to adhere.
  5. Step 5: Roll the cornmeal-coated catfish in the panko breadcrumbs to coat.
  6. Step 6: Heat about 1/2-inch of vegetable oil in a large skillet over medium-high heat.
  7. Step 7: Fry the catfish fillets for 4-5 minutes on each side, or until golden brown and cooked through.
  8. Step 8: Remove the catfish from the oil and place on a paper towel-lined plate to drain excess oil.
