Ingredients
- 4 tablespoons flour
- 4 teaspoons baking powder
- 0.5 cup milk
- 2 large eggs
- 1 teaspoon salt
- 1 pound sausage
- 2 cups all-purpose flour
- 2 tablespoons butter
- 2 tablespoons black pepper
- 0.75 cup buttermilk
Instructions
- Step 1: Preheat oven to 425°F (220°C).
- Step 2: In a large skillet, cook sausage over medium-high heat, breaking up with a spoon, until no longer pink, about 5-7 minutes.
- Step 3: Remove sausage from skillet with a slotted spoon and set aside on a paper towel-lined plate.
- Step 4: Reduce heat to medium and add butter to skillet. Once melted, sprinkle flour over butter and whisk to combine. Cook for 1-2 minutes, stirring constantly.
- Step 5: Gradually add milk to skillet, whisking constantly to avoid lumps. Bring to a simmer and cook until gravy thickens, about 5 minutes. Season with salt and pepper to taste.
- Step 6: In a large bowl, whisk together flour, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs.
- Step 7: In a small bowl, whisk together buttermilk and eggs. Add to dry ingredients and stir until dough comes together in a shaggy mass.
- Step 8: Turn dough out onto a floured surface and gently knead until it comes together. Roll out to about 1 inch (2.5 cm) thickness.
- Step 9: Use a biscuit cutter or the rim of a glass to cut out biscuits. Gather scraps, re-roll dough, and cut out additional biscuits.
