Ingredients
- 2 tablespoons olive oil
- 6 eggs
- 0.5 cup corn kernels
- 0.5 cup chorizo
- 0.5 cup black beans
- 6 tablespoons pepper jack cheese
- 0.25 cup cilantro
- 1 teaspoon cumin
- 0.5 cup zucchini
- 0.5 cup red bell pepper
- 0.5 teaspoon smoked paprika
- Salt and pepper
Instructions
- Step 1: Preheat oven to 400°F (200°C).
- Step 2: Toss the red bell pepper and zucchini with 1 tablespoon olive oil, cumin, smoked paprika, salt, and pepper on a baking sheet. Roast for 20 minutes.
- Step 3: In a large skillet, cook the chorizo over medium-high heat, breaking it up with a spoon, until browned, about 5 minutes.
- Step 4: Add the black beans, corn kernels, and cooked chorizo to the skillet. Cook for 2 minutes.
- Step 5: In a large bowl, whisk the eggs and season with salt and pepper. Pour the eggs over the chorizo mixture in the skillet. Scramble the eggs until cooked through.
- Step 6: To assemble the bowls, divide the scrambled eggs, roasted vegetables, and shredded cheese among six bowls. Top with chopped cilantro.
