Ingredients

  • 2 tablespoons olive oil
  • 6 eggs
  • 0.5 cup corn kernels
  • 0.5 cup chorizo
  • 0.5 cup black beans
  • 6 tablespoons pepper jack cheese
  • 0.25 cup cilantro
  • 1 teaspoon cumin
  • 0.5 cup zucchini
  • 0.5 cup red bell pepper
  • 0.5 teaspoon smoked paprika
  • Salt and pepper

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: Toss the red bell pepper and zucchini with 1 tablespoon olive oil, cumin, smoked paprika, salt, and pepper on a baking sheet. Roast for 20 minutes.
  3. Step 3: In a large skillet, cook the chorizo over medium-high heat, breaking it up with a spoon, until browned, about 5 minutes.
  4. Step 4: Add the black beans, corn kernels, and cooked chorizo to the skillet. Cook for 2 minutes.
  5. Step 5: In a large bowl, whisk the eggs and season with salt and pepper. Pour the eggs over the chorizo mixture in the skillet. Scramble the eggs until cooked through.
  6. Step 6: To assemble the bowls, divide the scrambled eggs, roasted vegetables, and shredded cheese among six bowls. Top with chopped cilantro.
