Ingredients

  • 2 tablespoons lime juice
  • 1 red bell pepper
  • 1 teaspoon smoked paprika
  • 2 cups water
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • Salt and pepper
  • 1 can black beans
  • 1 cup quinoa
  • 0.25 cup cilantro
  • 1 teaspoon cumin
  • 1 small red onion

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: In a medium saucepan, bring quinoa and water to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes or until quinoa is tender and fluffy.
  3. Step 3: While quinoa cooks, toss bell pepper and onion with 1 tablespoon olive oil, cumin, smoked paprika, salt, and pepper on a baking sheet. Roast in the oven for 20-25 minutes or until tender.
  4. Step 4: In a large skillet, heat remaining 1 tablespoon olive oil over medium-high heat. Add garlic and cook for 1 minute or until fragrant.
  5. Step 5: Stir in black beans and cook for 2-3 minutes or until heated through.
  6. Step 6: In a small bowl, whisk together lime juice and 1 tablespoon water.
  7. Step 7: To assemble the bowls, divide cooked quinoa among four bowls. Top with roasted vegetables, black beans, and a drizzle of lime juice mixture. Garnish with cilantro.
