Ingredients
- 2 tablespoons lime juice
- 1 red bell pepper
- 1 teaspoon smoked paprika
- 2 cups water
- 2 tablespoons olive oil
- 2 cloves garlic
- Salt and pepper
- 1 can black beans
- 1 cup quinoa
- 0.25 cup cilantro
- 1 teaspoon cumin
- 1 small red onion
Instructions
- Step 1: Preheat oven to 400°F (200°C).
- Step 2: In a medium saucepan, bring quinoa and water to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes or until quinoa is tender and fluffy.
- Step 3: While quinoa cooks, toss bell pepper and onion with 1 tablespoon olive oil, cumin, smoked paprika, salt, and pepper on a baking sheet. Roast in the oven for 20-25 minutes or until tender.
- Step 4: In a large skillet, heat remaining 1 tablespoon olive oil over medium-high heat. Add garlic and cook for 1 minute or until fragrant.
- Step 5: Stir in black beans and cook for 2-3 minutes or until heated through.
- Step 6: In a small bowl, whisk together lime juice and 1 tablespoon water.
- Step 7: To assemble the bowls, divide cooked quinoa among four bowls. Top with roasted vegetables, black beans, and a drizzle of lime juice mixture. Garnish with cilantro.
