Description
A flavorful and filling burrito packed with chicken, beans, and cheese
Ingredients
- 0.5 cup white rice
- 1 cup water
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 can black beans
- 8 large flour tortillas
- Salt and pepper
- 1 small onion
- 2 cups cheddar cheese
- 1 cup Monterey Jack cheese
- 1 teaspoon chili powder
- 0.5 teaspoon paprika
- Salsa
- 2 cloves garlic
- 1 pound chicken breasts
- 1 can diced tomatoes
Instructions
- Step 1: Cook the rice according to package instructions using 1 cup of water.
- Step 2: In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes.
- Step 3: Add the diced onion to the skillet and cook until translucent, about 3-4 minutes. Add the garlic and cook for an additional minute.
- Step 4: Stir in the cumin, chili powder, and paprika. Cook for 1 minute.
- Step 5: Add the diced tomatoes and black beans to the skillet. Cook for 2-3 minutes, stirring occasionally.
- Step 6: Season the chicken and vegetable mixture with salt and pepper to taste.
- Step 7: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Step 8: Assemble the burritos by spooning the chicken and vegetable mixture onto the center of a tortilla, followed by a sprinkle of cheddar and Monterey Jack cheese.
- Step 9: Fold the bottom edge of the tortilla up over the filling, then fold in the sides and roll the burrito up tightly. Repeat with the remaining ingredients.
