Description

A flavorful and spicy quesadilla filled with chicken, peppers, onions, and cheese.

Ingredients

  • 2 cloves garlic
  • 0.5 tsp cayenne pepper
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 can diced green chilies
  • 1 lb chicken breasts
  • 4 large flour tortillas
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 8 oz Monterey Jack cheese
  • 0.5 cup yellow onion
  • 0.5 cup red bell pepper
  • 2 tbsp olive oil

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: In a large skillet, heat 1 tbsp olive oil over medium-high heat. Add chicken and cook until browned, about 5-6 minutes. Remove from heat and set aside.
  3. Step 3: In the same skillet, add remaining 1 tbsp olive oil. Add bell pepper, onion, and garlic. Cook until vegetables are tender, about 5 minutes.
  4. Step 4: Stir in cumin, smoked paprika, cayenne pepper, salt, and black pepper. Cook for 1 minute.
  5. Step 5: Add cooked chicken back into the skillet and stir to combine with vegetable mixture.
  6. Step 6: In a large bowl, combine chicken and vegetable mixture, cheese, and diced green chilies.
  7. Step 7: Place a large tortilla in a skillet over medium heat. Spoon about 1/2 cup of the chicken and cheese mixture onto half of the tortilla.
  8. Step 8: Fold tortilla in half to enclose filling. Cook for 2-3 minutes or until tortilla is crispy and cheese is melted. Flip and cook for an additional 2-3 minutes.
  9. Step 9: Repeat with remaining tortillas and filling.
  10. Step 10: Cut quesadillas into wedges and serve hot.
