Description
A flavorful and spicy quesadilla filled with chicken, peppers, onions, and cheese.
Ingredients
- 2 cloves garlic
- 0.5 tsp cayenne pepper
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 can diced green chilies
- 1 lb chicken breasts
- 4 large flour tortillas
- 0.5 tsp salt
- 0.25 tsp black pepper
- 8 oz Monterey Jack cheese
- 0.5 cup yellow onion
- 0.5 cup red bell pepper
- 2 tbsp olive oil
Instructions
- Step 1: Preheat oven to 400°F (200°C).
- Step 2: In a large skillet, heat 1 tbsp olive oil over medium-high heat. Add chicken and cook until browned, about 5-6 minutes. Remove from heat and set aside.
- Step 3: In the same skillet, add remaining 1 tbsp olive oil. Add bell pepper, onion, and garlic. Cook until vegetables are tender, about 5 minutes.
- Step 4: Stir in cumin, smoked paprika, cayenne pepper, salt, and black pepper. Cook for 1 minute.
- Step 5: Add cooked chicken back into the skillet and stir to combine with vegetable mixture.
- Step 6: In a large bowl, combine chicken and vegetable mixture, cheese, and diced green chilies.
- Step 7: Place a large tortilla in a skillet over medium heat. Spoon about 1/2 cup of the chicken and cheese mixture onto half of the tortilla.
- Step 8: Fold tortilla in half to enclose filling. Cook for 2-3 minutes or until tortilla is crispy and cheese is melted. Flip and cook for an additional 2-3 minutes.
- Step 9: Repeat with remaining tortillas and filling.
- Step 10: Cut quesadillas into wedges and serve hot.
