Description

A fusion twist on traditional Italian and Mexican cuisine, featuring spaghetti-filled tacos with homemade meatballs.

Ingredients

  • 0.5 cup breadcrumbs
  • 12 taco-sized corn tortillas
  • Salt and pepper
  • 250 g spaghetti
  • sour cream
  • 500 g ground beef
  • 1 tsp basil
  • 1 tsp dried oregano
  • parsley
  • 2 medium onions
  • 1 egg
  • mozzarella cheese
  • 3 cloves garlic
  • 1 cup marinara sauce

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: In a large mixing bowl, combine ground beef, chopped onions, minced garlic, egg, breadcrumbs, dried oregano, dried basil, salt, and pepper. Mix well with your hands until just combined.
  3. Step 3: Use your hands to shape the mixture into meatballs, about 1 1/2 inches (3.8 cm) in diameter. Place the meatballs on a baking sheet lined with parchment paper.
  4. Step 4: Bake the meatballs in the preheated oven for 18-20 minutes, or until cooked through.
  5. Step 5: While the meatballs are baking, cook the spaghetti in boiling, salted water until al dente. Reserve 1 cup of pasta water before draining the spaghetti.
  6. Step 6: In a large skillet, combine marinara sauce and reserved pasta water. Bring the sauce to a simmer over medium heat.
  7. Step 7: Add the cooked spaghetti to the marinara sauce and toss to combine, ensuring the spaghetti is well coated.
  8. Step 8: Warm the taco-sized corn tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  9. Step 9: Assemble the tacos by placing a portion of spaghetti onto a tortilla, followed by a few meatballs. Top with shredded mozzarella cheese and a dollop of sour cream. Garnish with chopped parsley.
  10. Step 10: Serve immediately and enjoy!
