Description
A fusion twist on traditional Italian and Mexican cuisine, featuring spaghetti-filled tacos with homemade meatballs.
Ingredients
- 0.5 cup breadcrumbs
- 12 taco-sized corn tortillas
- Salt and pepper
- 250 g spaghetti
- sour cream
- 500 g ground beef
- 1 tsp basil
- 1 tsp dried oregano
- parsley
- 2 medium onions
- 1 egg
- mozzarella cheese
- 3 cloves garlic
- 1 cup marinara sauce
Instructions
- Step 1: Preheat oven to 400°F (200°C).
- Step 2: In a large mixing bowl, combine ground beef, chopped onions, minced garlic, egg, breadcrumbs, dried oregano, dried basil, salt, and pepper. Mix well with your hands until just combined.
- Step 3: Use your hands to shape the mixture into meatballs, about 1 1/2 inches (3.8 cm) in diameter. Place the meatballs on a baking sheet lined with parchment paper.
- Step 4: Bake the meatballs in the preheated oven for 18-20 minutes, or until cooked through.
- Step 5: While the meatballs are baking, cook the spaghetti in boiling, salted water until al dente. Reserve 1 cup of pasta water before draining the spaghetti.
- Step 6: In a large skillet, combine marinara sauce and reserved pasta water. Bring the sauce to a simmer over medium heat.
- Step 7: Add the cooked spaghetti to the marinara sauce and toss to combine, ensuring the spaghetti is well coated.
- Step 8: Warm the taco-sized corn tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Step 9: Assemble the tacos by placing a portion of spaghetti onto a tortilla, followed by a few meatballs. Top with shredded mozzarella cheese and a dollop of sour cream. Garnish with chopped parsley.
- Step 10: Serve immediately and enjoy!
