Ingredients
- 0.5 cup onion
- 0.5 teaspoon salt
- 4 large flour tortillas
- 1 pepper jalapeño
- cilantro
- 0.25 teaspoon black pepper
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 cup black beans
- 1 teaspoon cumin
- 2 cloves garlic
- 1 cup corn kernels
- 8 ounces Monterey Jack cheese
- 0.5 cup red bell pepper
Instructions
- Step 1: In a large pan, heat the olive oil over medium heat. Add the onion and cook until softened, about 3-4 minutes.
- Step 2: Add the garlic, jalapeño, cumin, smoked paprika, salt, and pepper to the pan and cook for 1 minute.
- Step 3: Stir in the black beans, corn kernels, and red bell pepper. Cook for 5 minutes, stirring occasionally.
- Step 4: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
