Description
A classic one-pot dish from Louisiana, flavored with spicy Cajun seasonings and loaded with sausage, chicken, and seafood.
Ingredients
- 2 cups rice
- 0.5 tsp paprika
- 1 lb chicken breast
- 2 tbsp Cajun seasoning
- 1 large bell pepper
- 0.5 tsp cayenne pepper
- 0.5 tsp salt
- 2 large onions
- 1 can diced tomatoes
- 2 cups chicken broth
- 3 stalks celery
- 1 lb shrimp
- 1 tsp thyme
- 1 lb smoked sausage
- 3 cloves garlic
- 0.25 tsp black pepper
Instructions
- Step 1: Heat oil in a large cast-iron pot over medium-high heat.
- Step 2: Add sausage and cook until browned, about 5 minutes. Remove from pot and set aside.
- Step 3: Add chicken to pot and cook until browned, about 5 minutes. Remove from pot and set aside with sausage.
- Step 4: Add onions, celery, and bell pepper to pot and cook until vegetables are tender, about 5 minutes.
- Step 5: Add garlic, Cajun seasoning, thyme, cayenne pepper, paprika, salt, and black pepper to pot and cook for 1 minute.
- Step 6: Add rice to pot and cook for 1-2 minutes, stirring constantly.
- Step 7: Add chicken broth, diced tomatoes, browned sausage, and chicken to pot. Stir to combine.
- Step 8: Bring mixture to a boil, then reduce heat to low, cover, and simmer for 25 minutes.
- Step 9: Add shrimp to pot and cook until pink and cooked through, about 5 minutes.
- Step 10: Serve hot, garnished with chopped scallions if desired.
