Description

A classic one-pot dish from Louisiana, flavored with spicy Cajun seasonings and loaded with sausage, chicken, and seafood.

Ingredients

  • 2 cups rice
  • 0.5 tsp paprika
  • 1 lb chicken breast
  • 2 tbsp Cajun seasoning
  • 1 large bell pepper
  • 0.5 tsp cayenne pepper
  • 0.5 tsp salt
  • 2 large onions
  • 1 can diced tomatoes
  • 2 cups chicken broth
  • 3 stalks celery
  • 1 lb shrimp
  • 1 tsp thyme
  • 1 lb smoked sausage
  • 3 cloves garlic
  • 0.25 tsp black pepper

Instructions

  1. Step 1: Heat oil in a large cast-iron pot over medium-high heat.
  2. Step 2: Add sausage and cook until browned, about 5 minutes. Remove from pot and set aside.
  3. Step 3: Add chicken to pot and cook until browned, about 5 minutes. Remove from pot and set aside with sausage.
  4. Step 4: Add onions, celery, and bell pepper to pot and cook until vegetables are tender, about 5 minutes.
  5. Step 5: Add garlic, Cajun seasoning, thyme, cayenne pepper, paprika, salt, and black pepper to pot and cook for 1 minute.
  6. Step 6: Add rice to pot and cook for 1-2 minutes, stirring constantly.
  7. Step 7: Add chicken broth, diced tomatoes, browned sausage, and chicken to pot. Stir to combine.
  8. Step 8: Bring mixture to a boil, then reduce heat to low, cover, and simmer for 25 minutes.
  9. Step 9: Add shrimp to pot and cook until pink and cooked through, about 5 minutes.
  10. Step 10: Serve hot, garnished with chopped scallions if desired.
