Description
A hearty and flavorful soup made with red lentils, onions, garlic, and a kick of heat from cumin and cayenne pepper
Ingredients
- 2 tablespoons cilantro
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 cup dried red lentils
- 1 teaspoon smoked paprika
- 1 can diced tomatoes
- 0.5 teaspoon cayenne pepper
- 4 cups vegetable broth
- 1 large onion
- 3 cloves garlic
- 0.5 teaspoon black pepper
- 1 teaspoon salt
Instructions
- Step 1: In a large pot, heat the olive oil over medium heat
- Step 2: Add the onion and cook, stirring occasionally, until softened and lightly browned (about 8-10 minutes)
- Step 3: Add the garlic, cumin, smoked paprika, and cayenne pepper and cook, stirring constantly, for 1-2 minutes
- Step 4: Add the lentils, diced tomatoes, vegetable broth, salt, and black pepper. Stir to combine
- Step 5: Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 25-30 minutes or until the lentils are tender
- Step 6: Use an immersion blender to puree the soup until smooth, or allow it to cool and puree it in a blender
- Step 7: Taste and adjust the seasoning as needed
- Step 8: Serve hot, garnished with chopped cilantro
