Ingredients
- 0.25 cup wasabi mayonnaise
- Sesame seeds
- 0.25 teaspoon ginger
- 0.25 cup rice vinegar
- 0.5 teaspoon sriracha sauce
- 1 cup Japanese short-grain rice
- 1 large sushi rice flour tortilla
- 0.5 teaspoon salt
- 0.5 pound tuna
- 0.5 avocado
- 0.5 carrot
- 0.5 cucumber
- 0.25 cup granulated sugar
- 0.25 cup pickled ginger
- 0.5 cup water
- 0.25 cup cilantro
Instructions
- Step 1: Prepare sushi rice according to package instructions, then mix with water, rice vinegar, sugar, and salt in a saucepan and cook over low heat, stirring constantly, until sugar and salt dissolve
- Step 2: Allow sushi rice to cool to room temperature
- Step 3: In a medium bowl, mix together diced avocado, sliced cucumber, grated carrot, chopped cilantro, and sliced pickled ginger
- Step 4: In a small bowl, whisk together wasabi mayonnaise, sriracha sauce, and grated ginger
- Step 5: Add diced tuna to the wasabi mayonnaise mixture and stir to combine
- Step 6: To assemble the burrito, lay the large sushi rice flour tortilla flat and spread a thin layer of sushi rice onto the center of the tortilla, leaving a 1-inch border around the edges
- Step 7: Add the avocado and cucumber mixture on top of the sushi rice, followed by the spicy tuna mixture
- Step 8: Fold the bottom edge of the tortilla up over the filling, then fold in the sides and roll the burrito into a tight cylinder
- Step 9: Slice in half and garnish with sesame seeds and chopped scallions
